Crispy corn Bhel  is a scrumptious, palate cleansing tangy savory snack(chaat).

From eating sweet corn right off the cob to fueling cars with ethanol additives, corn is the most versatile agricultural product on the planet. It has an astonishing array of products.

It fits like a glove in all cuisines. Putting  a small amount of effort transforms this to a gratifying treat.

Crispy corn is an additional coating of flour(and spice) over the corn for that extra crunch and taste.Its crispy on the outside , soft and juicy on the inside.  It can be eaten as is. Making  bhel puri with it is like icing on the cake.

A healthy combination of veggies , crispy puffed rice, chutneys and spice powders is just remarkable. Crispy corn has the edge over other ingredients which makes it so special. The tangy, sweet, spicy combination leaves you craving for more.

Makes 4 plates

Ingredients:

To make crispy corn:

1 cup Corn kernels boiled or canned

3 tbsp Cornflour

2 tbsp Rice flour

2 tsp pepper powder

Salt to taste

Oil to fry

3tbsp Water

 

To make crispy corn bhel puri:

1 cup  grated carrots

1 cup finely chopped onion

1 cup finely chopped tomato

5 tbsp Congress kadlekai (peanuts)

3 tbsp Tamarind chutney

3 tbsp Mint chutney

Salt to taste

1tsp red chili powder

1tsp chaat masala

Juice of half lime

½ cup Finely chopped coriander

3 cups puffed rice

10-15 pani puri -puri’s fried or papdi (or something crunchy would do)

Method:

To make crispy corn:

  1. In a large bowl add boiled corn kernels, rice flour,cornflour, salt to taste, pepper powder, water(add little by little) and shake well to coat all the kernels well.
  2. Heat oil in a pan, add the corn kernels slowly and close the pan as it pops. Fry for approx. 3min(but check after 2 min) and remove on a clean kitchen towel.
  3. Crispy corn is ready!!

 

**Crispy corn will look like “corn dusted with flour” it will not turn golden brown (as we have not added coloured spices)so dont keep frying for too long. It will get chewy if its overfried.**

To make crispy corn bhel puri:

  1. In a large bowl add (all ingredients that won’t get soggy)tamarind chutney,mint chutney,tomato,carrots,onion, lime juice,salt to taste,chilli powder,chaat masala and mix well
  2. Add peanuts, crispy corn, pressed rice, coriander and mix well (use your hands to mix instead of a spatula so the chutneys and spice powders is evenly coated)
  3. Guzzle right away!!
